Tagayasan Wood Handle
Known as "iron sword wood" - the Kanso line features a Tagayasan Wood handle that is notable for its denseness, durability, and simple beauty while providing easy cutting control. The handle is also angled for a comfortable chef's grip and precision cutting.
Full Tang Construction
Providing cutting balance and strength, the Kanso line features a full tang construction, meaning the blade and handle are one piece of steel.
The Kanso line also features a Heritage finish on the blade that helps hide scratches and gives the blade a rustic look that improves with age.
Layered Steel

To compare, I used my old Mac santoku. I had recently sharpened it, but only with a Horl rolling sharpener - I am no expert. The Mac slid through the almost overripe tomatoes easily.
Its a nice knife, but the Shun is the first knife I have ever bought that seemed not super sharp out of the box.
Knife is sharp and weighty, but the quality of the handle does not do the rest of the knife justice. It feels like a cheap wooden handle from a dollar store knife. Shun classic pro is a million times better.
I like the style of the kanso knives, they are really unique looking and are really nice quality. I enjoy using them, even my SO likes using them and he really isn't interested in cooking and food prep but he likes chopping stuff with these.
